What was your menu like for dinner/lunch/breakfast this week? And does anyone else find it a bit daunting to schedule out menus for the week while at the same time not having to many repeats? I am looking for good African, East Indian, and any other cultural dishes to serve. I LOVE Moroccan and Indian food. Please do share your recipes and menu ideas! What did you cook this week?

I am searching everywhere for new recipes that go with my new vegan eating habits! I now run into the same problems like you, what to cook without many repeats. This is my menu for this week, if you see a dish you'd like to try I would be glad to share the recipe!
Monday (yesterday) raw salad grated carrots, tomatoes, purple lettuce, cucumbers and some corn served with little vegan burgers with ketchup and fried onions, served with homemade fries
Tuesday: stringbeans with tomatoes served with basmati rice and baka bana (ripe plantain in a batter) and peanut sauce
Wednesday: Lazy Red kidney beans with pickled cucumbers
Thursday: chow mein with brocolli, peas, paksoi, bean sprouts and mushrooms
Friday: homemade pastasaus served pasta and french bread with vegan garlicbutter and for the kids grated cheese.
Saturday: Taco's with raw salad and vegan ground meat
Sunday: Roti with potatoes, stringbeans, and dhal
For lunch I have to say I haven't been to creative, I made toasted tomatoe sandwiches, raw salad and a smoothie (1 banana, 6 strawberries half a glass of orange juice) Breakfast is always the same here on weekdays less stress, either muesli with "milk" or oatmeal porridge with cinnamon and brown sugar. The kids sometimes have cereals the unhealthy kind but that's ok they eat healthy the majority of the time.
I found a great recipe for vegan american pancakes and I will give it a try this weekend.
I hope that other sistrens will post their menu's as well caus I am truly running out of ideas! I wanted to try Vegan black eye peas but vegan bacon bits and liquid smoke are things uncommon to me! I have searched in our local vegan store and they had no idea what that was. I am going to try and find substitutes for these ingredients or it will have to wait till dh goes back to pittsburg I will send him on a mission to search for these ingredients.
Have you ever tried indonesian or javanese food it is sooo delicious a bit spicy but that can be adapted to taste. It's really worth a try!

I love traditional soul
I love traditional soul food, but healthier options. For instance if we have fried chicken (like tonite) we use whole wheat flour and canola oil. We make our greens vegetarian style using veggie broth (or bullion cubes), with garlic, onions, peppers and various seasonings. We also love Thai dishes at home. One of our favorites is ginger coconut curry sauce over shrimp, brown rice and veggies.
We mostly bake or sautee our meats. Another house favorite is turkey meat loaf (thickened with oatmeal) with home made mashed potatoes (using soy milk) and veggies. We LOVE baked bbq chicken. Or any roasted chicken dish with veggies.
We try to keep fish (mostly tilapia) and brown rice in the home because we can usually come up with something for that. Dry beans stay in the cupboards. Which reminds me that pinto beans slow cooked in the crock pot with corn bread is always welcome! My Kingman loves this served over rice with fresh onions and sliced tomatoes.
Oh, I'm getting hungry now!
