I call it almost ital cause it has salt in it in the form of the seasoning Spike
I was in the mood for sweet and spicy the day before yesterday and so I went with it, here is what I came up with
1 head of green cabbage
1 jar of Dole pineapple (fresh is better if you, unlike me, know how to pick good ones)
2 ripe mangoes
1/4 red bell (sweet) pepper
1/4 yellow onion
red palm oil
cold pressed extra virgin olive oil
3 ripe plantain
6 servings of short grain brown rice
slice cabbage, bell pepper and onion thinly
cube mango
saute bell pepper and onion in palm and olive oil until soft, added Spike, garlic powder and crushed red pepper to taste, add cabbage and saute until done but not soft, still crunchy and pale green
in a separate iron skillet char mangoes and pineapples together, then add to cabbage
fry plantain and serve as a side dish
serve cabbage over rice
Sorry I didn't take pics while I was preparing, I was SO HUNGRY , as you can see in the pic I have my portion is almost done!
I also served it in a calabash for those who were wondering what it was...
ADDITION for Not Quite Vegan Yet Boyfriends, Lovers and Husbands (if you have one of these like I do)
saute two tilapia fillets in the oil used to char the mangoes and pineapples and serve over rice with the other dishes
IT WAS SUPERB!!

on: choosing pineapples
my mom taught me this trick:
look for those that are yellow-to-orange in their outside coloring, and make sure you store them upside down so the sweetest juices run all the way through to the top.
it works every time for me.
