Kale

There are so many companies pushing vitamins all around the world, when the only vitamins one needs are green ones that you can grow right in your back yard. Many vitamins, especially in solid form does not even have enough time to dissolve into your system. Kale and most other green leafy veggies offers an abundance of nutrients and a very mild earthy and sweet taste that will make you feel fresh just eating or drinking it! It does not take a lot, and you can easily add green veggies to your garden salads, fresh fruit juices/smoothies, and stews. As with anything, do not over consume.

*Kale is rich in: calcium, lutein, iron, and Vitamins A, C, and K and has seven times the beta-carotene of broccoli and ten times more lutein. Kale is rich in Vitamin C not to mention the much needed fiber so lacking in the daily diet of processed food eating Americans. The “Icing on the Kale” are the natural occurring all important phytochemicals sulforaphane and indoles which research suggests may protect against cancer. Let’s not forget the all important antioxidant Vitamin E. Rest assured kale spares nothing in providing one with much needed nutrients and associated health benefits.

*The naturally rich sulfur content of kale deserves a bit more discussion. Science has discovered that sulforaphane, helps boost the body’s detoxification enzymes, possibly by altering gene expression. This is turn is purported to help clear carcinogenic substances in a timely manner. Sulforaphane is formed when cruciferous vegetables like kale are chopped or chewed. This somehow triggers the liver to produce enzymes that detoxify cancer causing chemicals, of which we all are exposed on daily basis. A recently new study in the Journal of Nutrition (2004) demonstrates that sulforaphane helps stop breast cancer cell proliferation.

Easy Kale Juice!

1 Bunch of freshly Washed Kale, chopped (organic if possible)

2 Apples

Simply juice altogether, alternating between apples and kale. You will be surprised as to how little pulp comes out. If you prefer a smoother(less pulpy) juice, simply strain your juice in a juicing strainer(you can use a sifter should you not have a juicing strainer) and repeat until you reach your desired texture. You can add all sorts of fruits, but I like to keep it simple and I just add the apple to sweeten it up a bit. Enjoy for Your Health!
