Hi all! I wanted to share a few recipes that I have tried lately. My absolute favorite being the Que Jimenez Garden Burger, in which the patty is totally made out of squash and bit of bread crumbs!!!! It is delicious and a big hit with the fam! Even with the little one! I added some chopped onions, worcestershire sauce, and seasoned it quite a bit. Next time I am going to add a little bit of black beans. It does not taste like squash...it tastes super delicious & very firm!!!! Click here for the full recipe.

I also tries some stuffed cabbage leaves, in which I stuffed with the following: uncooked tilapia, diced, ¼ C. yellow onions, 1 tbsp. Tahini, 1 tbsp. soy sauce, 1 tbsp. Ginger, 2 cloves of garlic, 1 tsp. lemon juice, 1 tsp. Honey, salt, paprika, and chopped bok choy leaves. I wrapped the filling up in the cabbage leaves(secured them with toothpicks) and then baked them in the oven. I suggest steaming your leaves or else they come out a bit crunchy and tough, but I liked mine like that!
& this past Saturday we had some Pad Thai...here is the recipe: Vegetarian Pad Thai...it was really good, after you make this once, you will see that you can take many shortcuts and use less oil in which I did. I added a little shrimp to ours, but it tastes fantastic without it with just the tofu and bean sprouts! YUM!
& last but not least I gave a try at some spicy tuna rolls. It was really good! I just spiced up some tuna steak that I diced up with some cayenne, chili powder, a little mayo, a dash of honey, and salt. then wrapped it up in the nori sheets with thinly sliced cukes and sushi rice.

yes I will be making this tonight I have to pick up the veggies burgers though.
